Q: If I were to buy an Apple iPhone?

Would it be possible to set it up to answer my land line, allow the caller to hear my canned message and then record what the caller says in answer?

Talk to the carrier, you can re-direct the call to your iPhone, and if you don't answer, it will be in your voice mail.

They would hear your cell phone voicemail, not your land line.
