Q: can I un-delete my notes?

Is it possible to un-delete my notes? While switching phones I deleted notes from the 4S, and now they are gone from the 5C as well.

iPhone 4S, iOS 7.0.1

It's a bit difficult, but if they were on one of your devices when it was last backed up to iCloud, you can restore them from the backup by following the steps in Winston Churchill's post here: https://discussions.apple.com/message/22600445#22600445.
