Q: Guided Access

That is the correct article for Guided Access. It sounds like you might not have set it up or the set up was not completed. I would suggest going through the following steps again:

Tap Settings > General > Accessibility > Guided Access to set up Guided Access. From there you can:

• Turn Guided Access on or off
• Set a passcode that controls the use of Guided Access and prevents someone from leaving an active session
• Set whether the device can go to sleep during a session

Once you have done this and the triple-click of the Home button doesn't seem to be working, you might want to vary your click speed, either faster or slower to see if that is affecting the starting of a session.
