Do not move iTunes files in Finder unless you want to completely disable iTunes organizing your files in iTunes preferences. You can do that but then you will be completely responsible for keeping media organized and iTunes won't help you if things get lost. Downloads from the Store will still go to where iTunes wants to put them.

Once I download a movie, Avengers for example. Itunes puts it in the default Genre Action.
Then I go to get info, change the Genre to Comic Book Movies, and everything is fine.
The next day, next hour, at any given time it moves back to the Action Genre, but in the "get info" it still says its in Comic Book Movies. So I have to go back to "get info" and click OK, then it moves again.
I am on a brand new mac, latest itunes, my library is on a Lacie 6TB through the Thunderbolt.
In the preferences I have allow itunes to organize librabry UNCHECKED.
Hopefully you or someone can help, this is maddening!!

There are a handful of movies that I have reclassified into a specific genre and it seems everytime I open iTunes it moves them back into the genre they were originally in. Just like the OP though, when open "get info" for each movie it shows then under the genre I want them under - iTunes just puts them under the different genre.
For example, Alice in Wonderland was classified under "action and adventure" when I originally downloaded it. I moved it to the "kids" genre, but iTunes keeps moving it back to "action and adventure". Other examples, Star Trek Into Darkness get's classified under "action and adventure" even though I reclassified it under "sci-fi and fantasy" (and oddly the other Star Trek is classified and stays under "sci-fi and fantasy"). Also, iTunes keeps putting Madagascar 3 under "comedy". I'll admit that it is a kind of funny movie, but I would still prefer it be classified under "kids".
Those are just a few examples. I really don't see the point of being able to make changes to the classification of the movies if iTunes is just going to change it back for you. The only thing I am wondering is that if a movie has been downloaded on to a device before you make the changes in iTunes, and then you sync the device after making the change in iTunes - maybe that causes some confusions. Would iTunes look at how the movie is classified on the device and then sync it accordingly? Not sure, but if that is the case, I do wish changes made to the library would superscede changes made on a device.
Not a huge deal in the grand scheme of things, but if there is a solution I'm all ears. Any more light people can shed on this would be much appreciated.

Most of my movies I've ripped from DVD myself, but the single iTunes purchase I do have (the 2009 Star Trek reboot) insists on resetting itself to 'Sci-Fi & Fantasy' regardless of how many times I set it to 'SciFi'.
It's enormously irritating.

Something in purchased media (I am pretty sure this has only happened with purchased media) is periodically checking back with the iTunes Store and resetting the tags in the iTunes library file but not in the actual media files (metadata are stored in both). I haven't seen a truly systematic diagnosis of the issue (I use an old iTunes and have no iTunes account so I can't test anything myself). There are temporary workarounds but tags will still revert after a time. 2014 discussion about edited tags for Store purchases reverting to originals - https://discussions.apple.com/message/26077896 - edited tags are still present in the media file but revert to the originals in the iTunes library file. Workaround is to refresh tags so media file tags are re-read and used in library file. https://discussions.apple.com/message/26193185 Send feedback to Apple about this so they know it is an issue they need to investigate: http://www.apple.com/feedback/itunesapp.html Don't expect an immediate solution but maybe the next time they update the software it may be resolved.
