iAd Producer allows you to instrument your ad using various events that will appear in your campaign dashboard. iAd Blueprints already have some of the events you mentioned built-in. (To see the kinds of events that are logged and could potentially be logged, File > New iAd Blueprints Project…, File > Convert to Normal Project, Window > Analytics.)
Apple is very particular about what iAds can do, so I'd bet using "impression pixels" will almost certainly cause your ad to be rejected.
