Here's the issue. Snow Leopard v10.6.8 is an outdated OS X will never be updated again > Apple Kills Snow Leopard: OS X 10.6 No Longer Receives Security Updates
Unless you upgrade to a newer OS X you will continue to have problems using Safari no matter which version of Safari you have installled.
See if your Mac can run Mavericks > OS X Mavericks: System Requirements
If so, you can upgrade to Mavericks for free at the App Store which you should have installed on v10.6.8.

How can I tell if a Safari update that is not from Apple will work without messing up my whole system?
You can't. Apple is the only legitimate source for update to Apple software.
If the current version of Safari that runs on your version of OS X is not working to access the web sites you want to use, then download an alternate browser like Chrome or Firefox.
