The best bet is to restore to the latest firmware there is.

I'm having the same trouble and I can't restore my iPhone 5... I've tried several times the freezer way and nothing, still gets stuck on the beggining of "installing the firmware on the iPhone" and after that error 3. I've already gone to apple store and they cannot repair the phone without autorization from apple.Please some help? I've a brick right now and I don't know what to do with it

If you've left your iPhone in the freezer for 60 minutes AND done the Restore while the iPhone is still inside the freezer and your phone still has Error 3, you will not be able to fix your iPhone. It will stay a 'brick' I am sorry to say.
Your best bet is to show this thread to an Apple Genius and hope they take pity on you and will give you a free or deeply discounted refurbished unit.

Check for hardware issues
Related errors: 1, 3, 10, 11, 12, 13, 14, 16, 20, 21, 23, 26, 27, 28, 29, 34, 35, 36, 37, 40, 1000, 1002, 1004, 1011, 1012, 1014, 1667, or 1669.
These errors mean that your device or computer may have a hardware issue that's preventing the update or restore from completing.
- Check that your security software and settings aren't preventing your device from communicating with the Apple update server.
- Then try to restore your iOS device two more times while connected with a cable, computer, and network you know are good.
- Confirm that your security software and settings are allowing communication between your device and update servers.
- If you still see the error message when you update or restore, contact Apple support.

When I upgraded my iPad 3 from iOS to iOS 8 it bricked with the unknown error 3 message. Tried different cables and Windows 8 computers with and without antivirus enabled with no success.
Ended up taking the iPad to the Apple store in Spokane WA where they plugged the unit into a MacBook Air and it updated with no problems.
Back home in Florida when I attempted to update to iOS 8.02 the dreaded error 3 came up again and nothing I tried would work to get the iPad to restore.
Since the iPad was out of warranty I figured that the freezer tip was worth a try. After 1/2 hour in the freezer I set the iPad on a ziploc full of icecubes and tried again. It worked!

My phone started Searching for a Sprint signal yesterday afternoon while it wasn't being used. I had put 8.0 on it a few weeks ago. I didn't do 8.0.1 because of huge problems. So I called Sprint and they had me go and restore it, which got me stuck in the loop and I googled the problem and ended Up here. The freezer trick didn't work. Trying again with phone on a ziploc bag of ice. Fngers crossed.

Tried to force a restore of 8.0.2 ipsw from a manual restore via iTunes and that didn't work (said it was incompatible, downloaded it twice to make sure it wasn't corrupt), and tried to do the 7.1.2 and that wasn't compatible either.
I'll try downloading the 8.0 one more time on my wife's MacBook in one last ditch effort, then I'm selling it back to gazelle for $75 as "not working" and I'll just go get a new one tomorrow.
The out of warranty repair on a 5S is around $250 says the Apple website. An upgrade to a 6 using a family member's upgrade on the account will be $199.
