Try this ..
Select: Use Card on File with iTunes > Set up and use Apple Pay
If that doesn't help, see the instructions at that link to remove a card then restart your iPhone then add it back in.

Oct 24, 2014 3:23 PM in response to Carolyn Samitby kendellrt,I removed the card and added it back in, but the addresses never went away. Both the billing and shipping address sections have a "home" address filled in their respective fields. At least there aren't two or three entries in the address fields now. However, I was only able to re-add my debit card, but not remove the addresses from the billing and shipping fields in order to add a new and correct address. I may have to call AppleCare.

Oct 25, 2014 12:42 PM in response to kendellrtby Blues Fan,I had a similar issue to where it was my wife's info under the transaction defaults. Talked with AppleCare and they were stumped, but while on hold I was able to fix it myself. Maybe this might help you?
1. Check your own contact info in your contacts.
2. Under Mail, Contacts, Calendars > Contacts > My Info...make sure your contact is selected. (in my case it was my wife's somehow, so I changed it to me)
2a. Passbook & Apple Pay still showed her info as far as Addresses, Email & Phone.
3. Turn off phone
4. Turn on phone
5. Check Passbook & Apple Pay and all the info should now be correct.
I have been able to replicate this by picking a different contact card for "My Info" and none of the transaction defaults change until I power cycle.

Oct 25, 2014 1:37 PM in response to Blues Fanby kendellrt,Apple Care couldn't find a solution for me either. I have checked my contact info. I ended up making new addresses and named them using custom options instead of the default "home.". Then I was able to select the new addresses and they have stayed selected. The old one is still there and I haven't been able to remove them. However, they no longer are getting selected for some random reason like they were before. I successfully used Apple Pay with the new addresses.

Jun 23, 2015 3:47 PM in response to Blues Fanby assault_is_eternal,I tried this, but it didn't work for me. After messing around a bit, I did this, and it allowed me to delete the old address.
- I updated my address card so that it showed exactly what I wanted my address to be.
- went to Settings > Passbook & Apple Pay
- Clicked on Shipping Address
- Chose "add from existing contact"
- Picked my address card
- Now there are two address cards with my name; the old bad one and the new good one
- If I recall correctly, clicking on the "edit" button now allows to to delete whichever address you want (they both have the delete icon now)
- Now you should have one good card
I did notice at this point that there was a "Billing Address" as a choice. I had to go into my individual cards and delete the excess address so that I would only have the "home" choice.
