The scan files are in:
~/Library/Caches/Temporaryitems/MP Navigator 2.2/SCN_MFP
(you may have to change the version number to 'MP Navigator 2.1' or other).
This directory exists only while MP Navigator is open and has scanned at least one page. I suggest to create an alias on the desktop.
Once you have finished scanning your document, open the above directory, select all files (command-A), open (command-O), call the print command (command-P), but instead of sending to printer, save as PDF or attach to email (PDF menu in the bottom left corner of the Print dialogue). Then remember to delete all the files before your next scan.

For those wondering: This solution works with the latest version of iOS and a Canon Pixma MP500. YMMV, but it's working for me.
