The attached article has some great troubleshooting steps to complete when an iOS devices connected to your computer causes iTunes to become unresponsive. The steps outlined will also assist you with an unresponsive iTunes with your iPod connected. Please let me know if the issue continues after completing the steps within.

Thank you for the help. However, I tried it all up to trying with a different user account, and it still makes iTunes unresponsive. Once I give it a few minutes, iTunes comes back to life (and the iPod tells me I can safely disconnect it), but the iPod is still not recognized by iTunes.
I also went ahead and bought a new sync cable, but it didn't change anything.
I guess my only option now is to restore it all? Or should I try the Start Mode first?
Thanks again. I really hope we can figure something out, as Apple has discontinued the Classic and it's the only device that will handle all the music I own!

I would definitely test using Safe Mode first as the article describes. Please let me know if the issue continues while in Safe Mode.

Mac OS X: Follow this article to start up in Safe Mode. If the issue does not occur in Safe Mode, there may be login items or third party kernel extensions causing the issue.
Happy holidays,
Joe
