The following article shows you how to add another SMTP server. While it will not allow you to delet the server that appears to be stuck in the memory, it will allow the system to skip over it or you can turn it off.

thank you for your answer but it doesn't help, my problem is the opposite:
My iPhone tries to send the emails using a smtp that is not configured on my iPhone.
When going to the settings of my account I have only one primay smtp server that is configured, which is mail.messagingengine.com (that is the server I want to use), and no other smtp server.
So I don't understand why it is using smtp.free.fr which is not configured anymore in my Phone.
