I understand that you have two children who have Apple IDs that you would like to convert to children’s accounts (under 13) so that you will be prompted to approve purchases using Family Sharing. An Apple ID date of birth cannot be changed from an adult’s age to a child’s age. Apple IDs for a child must be created for the child during within Family Sharing. Please reviews the attached article for more information.

If a child’s birthday on their Apple ID account had previously been entered incorrectly when setting up Family Sharing, you can now change that birthdate by following the information in the article below.
Update the birth date associated with your Apple ID - Apple Support
