The resource below will explain all of your options for the Keynote Remote app. As you can see from the document, Wi-Fi is the most common connection. Bluetooth is only supported between iOS devices, not between your iPad and your Mac. Click on the link below to see more details and screenshots. I've quoted the key points for you:

When a Wi-Fi connection is unavailable, you can use Keynote Remote with Bluetooth to control your Keynote slideshow from one iOS device to another (but not to a Mac). Slides may take longer to appear on Keynote Remote when connected via Bluetooth.
Note: If your remote device is using iOS 7, it will be unable to control a presentation over Bluetooth on a device using iOS 8 or later.

- You can use a Mac to create a computer-to-computer network as an alternative to using a local wireless network. This is only recommended if you are using Keynote for Mac 6.1-6.2.2 or Keynote for iOS 2.1-2.4.2.
