Your first sentence implies that Apple has already given you a replacement iPhone.

Since Apple already has given you a new iPhone, it seems it can retrieve that number.

How was it connected to your iTunes of you never hooked it up to your computer?

That is the iTunes app. That is not the iTunes program for your computer.
