I am using "TNEF's Enough", which works very good and is free: http://www.joshjacob.com/mac-development/tnef.php
But in AppleStore you can find a lot of winmail.dat readers too: type winmail in the search field and take your pick, some are free and some are $.

The .dat is a sort of compression, the tricky thing is that it is always having the same name, so that on a mac when you save the attachment you must take care that it does not overwrites an earlier one.
