Perhaps you had other devices or accounts in the past which synced additional calendars. What are the calendars called? Yes, if you only need one, just delete the calendars you're not using.
The iCloud calendar has nothing to do with whether you back up to iCloud or to your PC. What did you turn off - the entire icloud account, just the backup feature, or something else? You will need to have some kind of cloud calendar to be able to send and receive invites.
DO your wife and son have separate iCloud accounts? (Do they both have iPhones?) or do they use your iCloud login? Did you set up family sharing? (This would let you create a shared family calendar).

OK, I did not realise you could delete them. Have now deleted them and have only one. But there is another one under icloud called family that i have shared with wife and son? Not sure where this one came from, possibly when i set up family sharing?
In icloud settings icloud drive is off, photos on, mail off, contacts on, calendar on, find my phone on, rest are off - I don't really know what on earth I am doing with icloud as there are no instructions as to what everything means or does if you turn on or off? Apple assume we have the same knowledge as the staff who work in the app store!
wife and son have apple id's, I don't understand what you mean by icloud acounts? it's all so confusing. yes they both have iphones, yes I have set up family sharing and that seems to work ok, for sharing apps. That is the only bit we have to be working OK!!
But if my wife sends me an invite i don't get it. My one remaining calendar does synch with outlook at work.
My wife and son are just as clueless on all options/settings. I asked my sons friends (teenagers) and they were just as clueless and only used whats app, instagram, twitter, etc, as they don't understand all the apple stuff either.
Apple have turned everything so complicated. If it helps you at my level of frustration, we have never managed to get any music on the three iphones from cd's copied to my PC. its too complicated, I did do it once on the first ipod, years ago, but never since. It kept saying iphone in not allowed on this PC and we just gave up, and was trying to synch hundreds of CD's we could not just to copy on the cd's and tracks we wanted. We have given up and subscribed to Deezer.
I am happy to move to another calender if it makes it easier, as I am really at the end of my tether with Apple complexity!
