I understand that when you send an iMessage through your Messages application, the recipients see your email address and not your phone number and you are not able to select your phone number because it is grayed out. In this situation, I would first recommend completely turning off iMessage, restarting your device, and turning iMessage back on as described in the attached article. If the issue continues, please let me know.
If you get an error when trying to activate iMessage or FaceTime - Apple Support
Turn off iMessage and FaceTime and restart
- Go to Settings > Messages and turn off iMessage.
- Go to Settings > FaceTime and turn off FaceTime.
- Restart your device.
- Turn iMessage and FaceTime back on.

Go back one screen and turn off 'iMessages'.
Wait 5 minutes; turn on iMessages ensuring no email addresses are selected.
It should then have your mobile number ticked, and iMessages will now be working.
