I don't have that option in System prefs either and Airplay in iTunes works great on my mid 2010 Mac mini.
I was able to select it but noted no action in Apple Tv on the TV from the desktop computer.
You played something in iTunes and then selected the AppleTV as the Airplay device?
How about using the AppleTV directly to play something from iTunes on the computer?

I am certain that there must be some form of activity in the System Preferences/Display dialog box.
I am certain you need it ONLY for Airplay Display, not Airplay thru iTunes.
Airplay and Airplay Display are two different actions.
So what exactly are you trying to accomplish?
- Do you want to display your Mac screen on the TV? (You cannot)
- Do you simply want to play you iTunes files on the AppleTV? (Use the AppleTV to play items from iTunes on your computer)
