The Wifi is visible in the list of networks available, but no connection can be established.

If so, are both AirPort Express Tv Ruimte AND AirPort Extreme van Erik configured for a roaming type network? ... and is AirPort Extreme Keuken configured to join or extend this roaming network?
Finally what is the make & model of the Internet modem or gateway that the "basic" Extreme is connected to?

I replaced the old Airport Extreme van Erik by a new Airport Extreme Erik, the old one didn't function (zero activity) .
It should serve as the basic extreme. So except the replacement of this AE van Erik nothing else physically changed in the old configuration, although I don't know if I configured the new basic extreme correctly. This could be the problem.
Airport Extreme Keuken should serve as an extension to the roaming network, to make the Wifi more easily accessible in all parts of the building.
The Internet Modem the Basic extreme is from Telenet, a Motorola / CV6181E (DOCSIS).
This morning I partly solved the problem by modifying the Network configuration at the AE van Erik by selecting the router modus DHCP and NAT instead of DHCP alone. Now every device can connect with the Wifi again.
The Airport Express TV now has a problem however, I don't know what's wrong here.
It apparently does not find a DNS server...?

In a roaming network, the "extending" base stations are actually broadcasting their own Wi-Fi network. However, since each should be using the same network name & security type, it will appear as a single network.

Yes, you want your "main" base station to be configured as a router. That is, it must have both NAT & DHCP services enabled. The "DHCP Only" mode is intended to be used in those situations where your ISP provides you with multiple public IP addresses that you want to distribute to devices on your local network.
The Airport Express TV now has a problem however, I don't know what's wrong here.
The roaming network link I provided you should explain how each of the base stations MUST be configured in order to have a properly working roaming network. In general, the following must be true:
- Each base station should have a unique base station name. I would strongly suggest that you use names that do not include spaces or punctuation marks.
- Each "extending" base station must be reconfigured as a bridge; i.e., have both NAT & DHCP services disabled.
- Each base station MUST use the same network name, wireless security type & password.
