You can re-select your screen saver by going to System Preferences (under the Apple menu) and selecting Desktop & Screen Saver, go to the Screen Saver tab and on the left side select your desired Screen Saver, in your case iTunes Artwork. See this article for information on how to select a Screen Saver - Mac Basics: Display a screen saver when you're not using your Mac.
Should the iTunes Artwork not work as it should, try selecting another Screen Saver to test its functionality, then go back to the iTunes Artwork.

I had completed the steps you outlaid before coming onto the forum. And usually, that would be the solution. However - the issue was within iTunes. The latest update for some reason unchecked a box allowing other apps/programmes (such as the screen saver and iPhoto) to access the iTunes library. after trawling for a period, i found this and resolved all issues.
