It sounds like accessing the email messages for an account of yours is causing your iPhone and iPad to behave erratically. Removing and re-adding the affected account may help stabilize the Mail app on your devices.
- Tap Settings > Mail, Contacts, Calendars.
- Tap the email account.
- Tap Delete Account.
- Add your account again.

I have tried your suggestion but as soon as I open the offending mail account it crashes again. I have tried this several times. I have not altered any of the account preferences in settings either. The only solution I have found is to load the Google Mail app.
