Thanks for using Apple Support Communities.
If iTunes is appearing in another language, then your system language setting has been changed. To change it back to the language you prefer please follow the steps below.
Changing your language setting in iTunes
Mac OS X
- From the Apple () menu, choose System Preferences.
- Choose View > Language & Text (Mac OS X v10.5 or later) or View > International (Mac OS X v10.4.9 or earlier).
- Drag your language of choice to the top of the list.
- Quit System Preferences.
- Quit and reopen iTunes.

Aug 19, 2015 6:40 AM in response to TWids57by TWids57,That was the first thing I tried. The only place this phenomenon appears is in the help menu within iTunes. I have not seen this occur in any other place. In addition when I choose Apple menu - View - the closest choice to your suggestion is Language and Region. I can not find "Language and Text". The problem persists.

Given that you've already made sure that English is your preferred language in the Language and Text System Preferences, and that this is only occurring in the iTunes Help, then I recommend getting in contact with our AppleCare phone support by using the link below.
