No, you don't need to take your iPhone with you.
Start a workout in the Workout app and end it when you're done (you can force press on the display in the Workout app to pause or end a workout).
However: it would be a good idea to take your iPhone along at least a couple of times, so that you can calibrate your Apple Watch. This will enable it to provide more accurate estimations - from both the Workout and Activity app - of distance, calories and more. Ensure that your iPhone is set up in readiness for this, with Location Services enabled. Ideally, hold it in your hand or on your arm in an armband.
