To clarify: have you unpaired and re-paired your Apple Watch and iPhone (using the Apple Watch app on your iPhone to do this and restoring your watch from the backup when offered that option during set up when re-pairing it)?
If you have already tried that, next try:
Unpair your watch from your iPhone using the Apple Watch app on your iPhone. This will create a new, up to date watch backup on your iPhone:
Apple Watch app > My Watch > General > Apple Watch > Unpair Apple Watch.
- Backup your iPhone:
- via iCloud (encrypted as standard) or
- via iTunes on a computer - IMPORTANT: choose to "Encrypt iPhone backup", so that the backup includes Health data along with saved passwords, Wi-Fi settings and website history.

- Erase all content and settings on your iPhone:
- Restore iPhone from backup:
- Pair your watch again - choose to restore the watch from backup when offered the option during set up (this will retain most of your data and settings except for calibration data (from Workout and Activity apps), synced playlists, cards used for Apple Pay and your watch passcode):

Calibration data is lost when the watch is re-paired with your iPhone (even if the watch is restored from a backup), so that process should ideally be repeated.
It is not urgent and can be done over time:
