Thank you for using Apple Support Communities.
You can change the size of the font in Notes, but it is not changed where you might think.
- In iOS 8, go to Settings > Display and Brightness > Text Size.
In iOS 7, go to Settings > General > Text Size. - Drag the slider to make the font bigger or smaller.

At this point it does appear that the change of the font size for Notes is only on the phone, not for printing. Sorry.
