    Hi Mateo

Apple Pay is presently available in the US and the UK.

Unless your device is set to one of those regions, you will not see the option to add cards.

You can only add supported cards from participating banks:

To change the region on your iPhone, go to:

    Settings > General > Language & Region > Region

For the watch, in the Apple Watch app on your iPhone, go to:

My Watch > General > Language & Region > Region Format

    Hi Mateo.

I just went through a similar situation, I believe triggered by me upgrading to latest WatchOS 2.0.1 over the weekend and I (re)discovered how this all works.  Adding the description below as it may help you too.

Apple Pay requires NFC and a secure element (a hardware chip).  The iPhone 6 and iPhone 6s have these, but the iPhone 5s does not.  The Apple Watch also has them, which is what we use when we go tap on the Apple Pay Point-of-Sale terminal.  So, with iPhone 6/6s you can pay either way, with the phone or the watch, but with the iPhone 5s you pay through the Watch only.

What this means is that we are using the "Custom" configuration for Apple Pay in our Apple Watch, not the "mirror your iPhone" configuration, and we are manually entering the card information into the Watch (using the app).  It also means that our iPhone 5s does not show things like Apple Pay in the Wallet and in the settings.

Follow the instructions at Set up and use Apple Pay with your Apple Watch - Apple Support following the section about adding new cards using the Apple Watch App.  And make sure your Watch is NOT configured to mirror the iPhone.

    Hope this helps,

    - eduard/o

    Hi

The Mirror / Custom settings that you refer to relate only to Notifications; they have no bearing on, for example, adding cards to Apple Pay or what is shown in Settings.
