If I am doing stuff on my Mac and update playlists, add new music and videos, etc. Does it only wirelessly synch if I click the synch button in iTunes or does it periodically check and synch with my devices on its own?

When the computer and the iOS device are on the same network, the iOS device will appear in iTunes. Then you can sync it. The iOS device will sync automatically when the following conditions are true:
- The iOS device is charging.
- iTunes is open on the computer.
- The iOS device and the computer are on the same Wi-Fi network.
Other than that, when you make changes to things on your computer, you may need to manually initiate the sync if the above conditions are not true at that moment.
Wireless syncing works essentially the same way as wired syncing:
