If you have not already done so, it may help to update your iPhone and Apple Watch to the latest software versions (presently iOS 9.0.2 and watchOS 2.0).
To update your watch, you will first need to update your iPhone to iOS 9 or later. To update your devices, follow the instructions here:

Update the software on your Apple Watch - Apple Support
Having done this, you can also calibrate your watch. Calibration can improve the accuracy of health and activity related estimations including:
- Calorie, distance, Move and Exercise estimations in the Activity App.
- Calorie estimations for workouts when using the Workout app.

Among other things, these explain that Exercise is considered to be any activity that is performed at or above the level of a brisk walk.
