Run this and post the results here so we know more about your configuration.
It could be a failing HD. It has to keep reading the disk to get a successful read. The HD on my late 2009 Mini failed like about two years ago.
Also, unless you upgraded the RAM from 2 GB it will be slow
- Try resetting the SMC and NVRAM/PRAM

- Try starting in Safe Mode

- Boot to Recovery and repair the startup disk

- If it is repairable reinstall the OSX
How to reinstall OS X on your Mac - Apple Support
- If you do not have a backup use disk utility to restore the internal disk to an external disk so you can try to recover data.
Then format the startup disk and do a fresh install of OSX

If you don't have an external drive as a backup, you should get one. If your drive is failing, you risk losing everything. Plus you could transfer some files from your internal drive to create more free space on your internal.
Your biggest performance improvement would be to replace the stock internal drive with a SSD.
Next, you could benefit from a RAM upgrade, at least 4 Gigs, but it will take 8 Gigs max.

Upgrade memory. 2 GB is not enough for smooth operation. Your Mac can accept 8 GB (2 x 4 GB)

I was doing some looking online last night, and it suggested I needed to take it in to have some memory added. I'm assuming any place that works on Mac's can do this?

Seeing the Apple logo during startup is a normal part of the process.
