What is the make and model number of your router?

Bob is quite correct.. but in this case your modem is not the router.. DPC3000 is a pure cable modem.. not a router.
So going back to your original post.

No.. this is not true.. you just need to port forward in the router which is the airport.

Do you have airport utility loaded??
Do you have any iOS devices?? If so you can use airport utility in those .. and it is far superior to windows.. in fact if your airport is later model then windows version airport is not even rated to do the configuration.
So what airport exactly do you have??
Read the instructions for port mapping here.. (mapping is another term for forwarding).
Seriously consider buying a standard UPNP router.. these are cheap, say US$50 and less.. which will work a lot better with windows and games.

I tried port forwarding with the airport utility but you need to turn off bridge mode or turn on PPPoE and I believe you need bridge mode off to port forward.

No, you do not turn off bridge.. You should not be in bridge so this is irrelevant.
or turn on PPPoE and I believe you need bridge mode off to port forward.
Again no to pppoe.. you are on cable.. and you should already have a full router setup on the Extreme.. not bridge.
There is no such thing as PPPOE on cable.. your setup should be
dhcp on the internet tab and dhcp and nat on the network tab.
Port forwarding will work perfectly well with this setup.
Please post screenshots of these and we can help you from there..
