It sounds like you're having issues with the "Uber" app that is installed on your Apple Watch. The following Knowledge Base article offers a number of good steps to review for troubleshooting:
Get help installing a third-party app to your Apple Watch
Before you begin
To make sure the app is compatible with Apple Watch, go to the App Store, tap the app, and tap Details.

Update the app
- On your iPhone, open the App Store and tap Updates.
- If updates are available, tap Update All.
- If asked, enter your Apple ID password.
Stop and restart the installation
- Open the Watch app on your iPhone and tap the My Watch tab.
- Tap the app and turn off Show App on Apple Watch.
- Wait a moment, and then turn on Show App on Apple Watch again.
Get more help
- Restart your Apple Watch and your iPhone.
- Contact the app developer for more help. Find the app in the App Store, tap it, then tap Reviews > App Support.

I've uninstalled the Uber app, restarted both iPhone and Apple Watch, reinstalled them.
I've tried with different Wi-Fi access points, Wi-Fi off.
The Uber app doesn't load, it's stuck on the start black screen with the blue dot blinking.
Is there a solution to this?

Uber Help is absolutely no help at all... https://help.uber.com delivers this:
Clicking on 'Go to homepage' just returns the same message.

This is my experience. WatchOS 2.0 and 2.01 have both meant the Uber app either doesn't load or when it does load updates on my iPhone are not communicated to the Watch. Same updates broke Words With Friends on my Watch. Now that I think about it the only third party app I regularly use that continues to function after WatchOS 1.0 is Amazon.
