If I replace the hard drive, I will lose all of the applications installed correct? I bought the macbook used with pre-installed software...a lot of it. Any way to save the software as I don't have the originals?

Other than that, yes, by replacing your hard drive, you will need to reinstall the OS and ALL apps from scratch since the new HD will be empty.

I do have some older versions of applications I can use. Because I just bought this used, I don't have any documents, music or photos to save. I am going to replace the hard drive with a solid state though. I have also ordered Mountain Lion to upgrade. Will this MacBook accept Mountain Lion?

No.
OS X Mountain Lion system requirements - Apple Support
The most it can take is Lion. However you will need to install Snow Leopard first to update to Lion, since Lion is only available through the Mac App Store as a download.
