Do you have the Wi-Fi & Cellular version of iPad Pro?
You do not need an Apple Sim, what you need is a cellular Data Only Sim from T-Mobile (normal nano sim for phone do not work)

T-Mobile is listed as a carrier in the program along with AT&T, Sprint and GigSky. I do have a Wi-Fi & Cellular version of the iPad Pro.

Anyway, maybe the guy you talk to from T-Mobile is not informed or want to sell you something else.
Go to a local Apple Store, they can surely help you.
