I have attempted to re-order the conversation as you describe but I am not sure I have it right plus there is an extra "Yes" I can't place satisfactorily.
If you mouse over a bubble and hold still it will tell the message time
You have to do each one separately
Only the Side Bar list of Conversations/Chat can be re-ordered if set to Manually (in the View Menu > Sort Conversations).
I cannot see why this particular chat is doing this.
AS a test can you look in System Preferences > Date and Time and see if the Automatic time server is enabled ?
It is possible if it is not set that when the computer is busy CPU-wise the time can drift a little.
As Chats are then Time Stamped they might get given the "wrong" time.
