I understand that you are seeing your entire catalog of music and videos when trying to view them on your Apple TV. I know that you only want to see a select few items and trying to limit that in iTunes Preferences on your computer. Let's go over why that is.
So the feature that you are using to limit what is seen is called Music Sharing. This will allow anybody on your wired or wireless network see the contents of your iTunes library through iTunes. The selections you make will be reflected when they look at your library from iTunes and they can play that content by streaming it from your computer. They would not have the ability to download it.
Your Apple TV uses Home Sharing to show the content of your iTunes Library. It doesn't have the option to pick and choose what items to show.
