How much ram have you installed in your system?
what is your macbook model?
could you post a log of the crash OS X: About kernel panics - Apple Support
and could you post a screenshot of the activity monitor memory and CPU tabs?

Run this and post the results here so we know more about your configuration.

Regarding using memory, recent OSX versions try to use all available memory since if not used it does not good. OSX caches things you might use in the future to speed things up when excess memory is available.
