Changing the file extension does not change the audio format. If you need to create MP3 versions of your existing files, use this guide:
iTunes: How to convert a song to a different file format - Apple Support
Note that the iTunes conversion creates a new MP3 and leaves the existing file in place. Make sure you use the new MP3s for your car.
