It is not presently possible to edit the watch's name as listed within the Health app.
You could unpair your Apple Watch and set it up again as a new watch. This would add it to the list of Data Sources with whatever name it is set it up with. However, the old watch name would also remain listed within the Health app.
If you are happy to lose all data stored by the Health app on your iPhone (including Activity data, Achievements and Workout data) - and also to lose other sensitive data on your iPhone including HomeKit data, saved passwords and Wi-Fi settings - then you can:
- Unpair your watch:
- Backup your iPhone to iTunes as an unencrypted backup:
- This is only possible via iTunes, as iCloud backups are encrypted as standard.
- Erase all content and settings on your iPhone:
- On your iPhone: Settings > General > Reset > Erase All Content and Settings.
- Restore your iPhone from the unencrypted backup:
- Re-pair your Apple Watch, choosing to Restore from Backup when offered the option during set up:
To reiterate: this would result in the permanent loss of all accumulated Activity and Health data from all sources.
You would also need to add any cards back to Apple Pay on both devices.

I am sure that this method is effective. But I lose more than I get, if I go this way:)
I would rather wait for improvements in the program:)

If you would like to suggest that Apple considers adding the ability to edit the existing watch name (or reflect changes made elsewhere) within the Health app Data Sources list, you can do so here:
