It sounds like your iTunes application seems to be quitting unexpectedly on you for some reason. If you are on a PC I would recommend you use the troubleshooting in the following article:
Fix unexpected quits or launch issues in iTunes for Windows
If you are on a Mac I would check for third party plugins with this article:
iTunes: Troubleshooting issues with third-party iTunes plug-ins
You may even need to download a fresh copy of iTunes and install it from here:
http://www.apple.com/itunes/download/
