I see you are getting choppy or jumpy video playback when sharing video to your Apple TV. The symptoms are often a result of a poor or slow network. To that end, take a look at the network section of the following troubleshooting article:

This is NOT a network issue, as I have this problem on a 150 Mbps wifi connection (MacBook Pro) to a wired Apple TV on ethernet. The problem is that Apple TV 4 is a half-baked product.
