On your iPhone, in the Watch app, go to: My Watch (tab) > General > scroll down to the bottom > turn on Nightstand Mode.
To use your watch in Nightstand mode:
- Connect your watch to its charger (with power connected) or connect it to your Apple Watch Magnetic Charging Dock.
- In each case, place your watch on its side with the buttons facing up.
- To see the time, tap the display or lightly nudge your watch (or perhaps even just your bedside table).
- If you also set an alarm using the Alarm Clock app on your watch, it will alert you at the specified time.

Jan 3, 2016 1:56 AM in response to Ktpantsby Jonathan UK,If you have not yet done so, you may also wish to update your iPhone and Apple Watch to the latest software versions (presently iOS 9.2 and watchOS 2.1).

I'm probably being really stupid but I can't find it! The bottom 3 options are wake screen, usage and reset?
And yes, currently updating to newest system.

Ensure that both your iPhone and Apple Watch are updated to the latest software versions.
The setting should then be shown within the Watch app.
