It sounds like some of your emails are displaying in an odd format but when you view and return to the email list they display appropriately again. The first step I would recommend is closing the application as indicated in this article:
If an app is unresponsive and your iPhone, iPad, or iPod touch still reacts to button presses, you can force the app to close:

First steps
Follow these steps first:
- To make sure that you're connected to the Internet, open Safari and go to www.apple.com.
- Log in to your email provider's website and make sure that the account is active and that you're using the right password.
- Check your email settings.
- Restart your iOS device.
- Remove the affected email account from your device with these steps:
- Tap Settings > Mail, Contacts, Calendars.
- Tap the email account.
- Tap Delete Account.
- Add your account again.

Jan 3, 2016 11:52 AM in response to pedro dby brhinminn,I Have the same issue. Force quit does not fix it. Please help! This started after 9.2 install, never on iPad pro prior to latest iOS.
reboot also does not solve it.

Jan 4, 2016 8:14 AM in response to brhinminnby JDRiggs874,I have this same issue! It's driving me nuts! Long email display 8 characters wide and you have to scroll down for an eternity to read! Apple please fix!!! Force close has no effect. This isn't sporadic, it's that way ALL THE TIME!

I have to open the pictures in the browser and that's the only way to get the pics to load. I shouldn't have to do this! I've tried all the recommendations and then some, but nothing works! Please Help!

I now use Microsoft Outlook on my iPad Pro and 6s Plus.
Works perfectly! Displays perfectly!
I Recommend highly!!!

I highly recommend to buy a Surface to use Outlook!

i'll use Apple Mail when they finally get around to fixing it. I'm not using a defective app.

Is the problem a "Google specific" problem?

Emails on the right right pane now appear centered and scrunched, using only a portion of the available screen on the iPad Pro. Mail.app is pretty much unusable and I unfortunately had to switch to Microsoft Outlook.
