I understand your Epson 3520 is somehow not working since you upgraded your MacBook Pro to El Capitan. Thanks for reinstalling the drivers, a good troubleshooting step.
The printer is listed in About AirPrint - Apple Support as having AirPrint support. That article has some further troubleshooting steps to go through.
