From the Apple or iTunes side you would just open your Finder and from your home folder go into Music, iTunes, and then browse to the albums or songs you want to upload to Amazon. Of course this presumes your iTunes music is not DRM protected but anything you've purchased from iTunes in recent years won't have DRM. If you're using an Apple Music subscription then you won't be able to transfer any AM tracks you've downloaded for offline listening as they are DRM protected.
