It sounds like you have the option to sync via Wi-Fi enabled and that iTunes needs to be updated in order to sync your iPhone 6s. Your Mac will most likely support the upgrade to El Capitan which will allow you to update iTunes to the most current version. He is more information on updating your Mac and checking to see if it meets the system requirements.

The new iPhone hasn't ever been connected to iTunes on this Mac (contrary to the iPhone 5S I restored the data from). iTunes doesn't discover this device. So I cannot disable wifi-sync for the iPhone 6S in iTunes.
Updating OS X on the Mac is impossible. It's an old (white) iMac which isn' t supported by anything newer than by 10.7.

Thanks for the follow-up. It still sounds like when you restored from the iPhone 5s backup that the sync preference is set to sync over Wi-Fi when connected to your network. However, I think the best option to further assist you with this would be to reach out to us via phone.
