I understand that you are unable to add your Gmail account to your iPhone as the application doesn't respond. I would start with forcing the Mail application to close and the try to add your Gmail account to your iPhone.
If the issue persists, check to make sure that two-step verification isn't enabled on your Gmail account and try all remaining troubleshooting steps in the article below.
