Q: Apple "HEALTH" app... what is compatible with it?

I understand that you are looking for some accessories that work with the Health app. That is something that I can get you started on.
Start by taking a look at the first link below. It will have a few iPhone accessories that are computable with it that are inline to what you are looking for. You would have access to a scale, thermometer and other health related accessories.

As far as using the Health app to access it, that may work slightly different that what you are thinking. Each device will have its own app that it works with, but will be able to share that information to the health app to have all the data in one place.
