I am unsure of what you are referring to. Are you referring to tapping the screen or the home button?
If you are referring to tapping the Home button, then you might talking about Reachability. This feature allows you to bring down the apps towards the top so you can use them. If you want the home screen to go back, then double tap the Home button again. More details in the link below.

If you are referring to a zoomed in image, then you are referring to the Accessibility feature called Zoom. If you double tap with three fingers, this should zoom in and out depending on what view you are in. If you are not wanting to use this feature, you can turn it off by navigating to Settings > General > Accessibility > Zoom and toggle the switch off. You can also turn this off when you have your iPhone plugged into your computer and use iTunes to change the settings. Take a look at the article below for more details.

Settings - General - Accessibility - scroll down to Interaction - Assistive Touch - toggle to ON
