I understand that you are not seeing all your content after canceling your Apple Music Membership. That is something I can help you out with.
The one thing I want to make sure is turned off is iCloud Music Library. This is how your Library in iTunes and your iPhone would stay in sync with each other. Turning this off but leaving Apple Music on will ensure that you can see just your purchased content and be able to download this. Take a look at the first article that explains what iCloud Music Library does. The second and third article will be for deleting the content if it is greyed out and then downloading your purchased songs again.
