Since you cannot access the iPod normally (without causing the "lock up" problem), see if you can put the iPod into Disk Mode

If the iPod goes into Disk Mode, run iTunes and connect the iPod. If iTunes picks it up (and does not lock up), it may prompt you to do a Restore with a message about "Recovery." Let iTunes do the Restore. That may resolve the issue, if the cause was data corruption on hard drive and not a physical hardware problem.
